🥩 Mushroom & Swiss Stuffed Beef Rolls
Ingredients
- 4 thin slices of beef (flank steak or sirloin, pounded thin)
- Salt & black pepper
- 1 tbsp olive oil
Filling:
- 1½ cups mushrooms, finely chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp butter
- ½ tsp thyme (or Italian seasoning)
- ½ cup shredded Swiss cheese
Sauce (optional but recommended):
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 tbsp flour or cornstarch (for thickening)
Instructions
1. Prepare the filling
In a pan, melt butter and sauté onion until soft. Add mushrooms and cook until moisture evaporates and they start to brown. Stir in garlic, thyme, salt, and pepper. Let cool slightly, then mix in Swiss cheese.
2. Assemble the rolls
Lay out beef slices, season lightly, and spoon the mushroom mixture onto each piece. Roll tightly and secure with toothpicks or kitchen twine.
3. Sear
Heat oil in a skillet over medium-high heat. Sear the beef rolls on all sides until nicely browned.
