Air Fryer Crispy Tortilla Frittata Pie
A fast, crispy, protein-packed brunch or light dinner that combines a tortilla crust with fluffy eggs, cheese, and vegetables.
Ingredients (Serves 4)
- 4 large eggs
- 2 flour tortillas (8-inch)
- ½ cup milk
- 1 cup shredded cheddar or mozzarella
- ½ cup cooked chicken, turkey, or sautéed mushrooms
- ½ cup bell peppers, diced
- ¼ cup onion, finely chopped
- 1 cup spinach
- 1 tbsp olive oil
- ½ tsp paprika
- ½ tsp oregano
- Salt & black pepper to taste
- Optional toppings: feta, olives, chili flakes, avocado
Instructions
1. Prep the Filling
Whisk together:
- Eggs
- Milk
- Paprika
- Oregano
- Salt and pepper
Fold in cheese, vegetables, and cooked protein.
2. Form the Crispy Tortilla Crust
Lightly brush tortillas with olive oil.
Place one tortilla into the air fryer basket or pan, pressing it up the sides like a pie crust.
For extra crunch, overlap the second tortilla slightly.
3. Fill the Pie
Pour the egg mixture into the tortilla shell.
Top with extra cheese if desired.
4. Air Fry
Cook at:
- 320°F (160°C) for 12–15 minutes

The center should be set and the tortilla edges deep golden and crispy.
5. Rest & Serve
Let cool 3–5 minutes before slicing.
Serve with:
- Salsa
- Greek yogurt or sour cream
- Fresh herbs
