Ingredients (1 standard 9-inch pie)
For the crust (or use store-bought)
- 2 1/2 cups all-purpose flour
- 1 cup cold unsalted butter (cubed)
- 1 tsp salt
- 1 tbsp sugar
- 6–8 tbsp ice water
For the filling
- 5–6 apples (peeled, sliced)
- 3/4 cup sugar (adjust to taste)
- 2 tbsp brown sugar
- 2 tbsp flour or cornflour
- 1 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp butter (for dotting)
Instructions
1. Make the dough
- Mix flour, salt, and sugar.
- Cut in cold butter until crumbly.
- Add ice water gradually until dough comes together.
- Divide into two discs, wrap, and chill for 30–60 minutes.
2. Prepare filling
In a bowl, toss apples with sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla.
3. Assemble pie
- Roll out one dough disc and place in pie dish.
- Add apple filling and dot with butter.
- Roll out second dough and place on top (full crust or lattice).
- Seal edges and cut small vents.
4. Bake
- Preheat oven to 190°C (375°F)
- Bake 45–55 minutes until golden and bubbling
- If browning too fast, cover edges with foil
5. Cool
Let the pie rest at least 2 hours so the filling sets properly.
